Offbeast has developed beef tips containing a 50:50 blend of meat and plant-derived ingredients, using a manufacturing process designed to create whole-cut structure from inputs such as ground beef and beef fat.
The Baltimore food technology company is applying its Cross-Fiber Assembly platform to hybrid meat after originally developing the process for plant-based steaks. Its approach is intended to create aligned, muscle-like fibres rather than the homogeneous structure more commonly associated with burgers, sausages, and other formed meat products containing plant ingredients.
Hybrid meat itself is well established. Textured vegetable proteins and other plant-derived ingredients have long been incorporated into processed meat to alter yield, formulation cost, nutrition, and texture, while a newer group of manufacturers has begun developing products containing much higher proportions of non-meat ingredients.
Offbeast is taking that principle into whole-cut formats. The company says its process can transform unstructured meat into aligned fibres, with a plant-based binder connecting the structure while also reducing the amount of meat required in the finished product.
The first commercial target is beef tips rather than premium steaks. That choice gives the process a relatively forgiving route into whole-cut production because smaller pieces can be used across foodservice, prepared meals, retail cooking applications, and sauces without having to reproduce the uniform appearance expected from a conventional steak.
Manufacturing compatibility forms a significant part of the proposition. Offbeast says the process is continuous and has been designed around commercially available machinery, allowing companies already operating meat or plant-based sausage and burger lines to adopt the technology without a dedicated new processing platform.
That claim matters in a sector where specialist equipment can become one of the largest barriers between pilot development and commercial output. Alternative-protein businesses have repeatedly demonstrated viable formulations at small scale only to face substantially different economics when specialised texturisation, fermentation, or forming equipment has to be installed at industrial throughput.
Offbeast’s approach is intended to reduce that barrier by treating the structuring technology as a process that can sit closer to conventional meat manufacturing. Individual processors would still need to establish the appropriate equipment configuration, cleaning procedures, production controls, ingredient handling, food safety programme, and finished-product specification before moving into commercial manufacture.
The company says the technology has already been tested at its Baltimore pilot facility at capacities of up to three tonnes per shift. That moves the work beyond a laboratory-scale sample but does not yet represent routine production within a large meat processor.
Offbeast is consequently looking for partners with established manufacturing and distribution rather than building a vertically integrated meat business around the product itself. Commercial scale will depend on transferring the process from its own pilot operation into a partner plant while preserving fibre structure, consistency, yield, and line speed.
Raw-material economics provide part of the attraction. Whole cuts generally command higher values than the ground or lower-value meat inputs that Offbeast says can be restructured through its process. Adding plant-derived material can also reduce the proportion of beef required per kilogram of finished product, although the actual cost advantage will depend on formulation, plant-protein prices, yield, labour, packaging, and production efficiency.
The company has made substantially stronger margin claims for the technology, but those remain Offbeast calculations rather than independently demonstrated economics. A processor evaluating the system would need its own plant trials before establishing whether ingredient savings outweigh additional formulation, handling, licensing, or process costs.
Texture is equally important. A conventional burger can tolerate a relatively uniform matrix because grinding has already removed the directional muscle structure associated with an intact cut. Beef tips and strips expose the structure more clearly, requiring fibres to remain coherent during cutting, cooking, chewing, and reheating.
The plant fraction also changes the way the product behaves. Proteins, binders, water, and fat can respond differently to freezing, storage, heat, and mechanical handling, while a hybrid formulation has to retain moisture and structure without becoming either excessively soft or recognisably separate from the meat component.
Labelling and production controls will need similar attention. Depending on the final recipe and market, manufacturers have to account for ingredient declarations, allergens, nutrition information, product naming, traceability, and segregation of plant materials entering a meat factory.
Those practical considerations will determine whether hybrid whole cuts develop beyond an interesting technical demonstration. Existing meat businesses have the distribution, processing expertise, and customer relationships Offbeast wants to access, but they will expect the process to perform under commercial conditions rather than simply produce a convincing prototype.
The company has now defined the product, established a pilot-scale manufacturing claim, and demonstrated that its Cross-Fiber Assembly platform can be applied to a meat-and-plant formulation. The next step is less theatrical: transferring that structure into an established processing line and proving it can survive industrial throughput, customer specifications, and repeat production.
