FrieslandCampina introduces pre-acidified whey isolate for clear drinks

FrieslandCampina has introduced pre-acidified whey isolate for clear protein beverages. Nutri Whey Isolate Clear PA targets still and sparkling formulations, while the company has not published universal processing limits or commercial customer results.

IN Brief:

  • Nutri Whey Isolate Clear PA is a new pre-acidified isolate intended for transparent protein beverages.
  • The ingredient is being demonstrated in still and sparkling formulations, including a low-sugar soda containing GOS fibre.
  • Nutri Whey ProHeat, used in separate concentrated nutrition concepts, is a different ingredient and should not be confused with Clear PA.

FrieslandCampina Ingredients has introduced Nutri Whey Isolate Clear PA, a pre-acidified whey protein isolate developed for clear still and sparkling beverages. The Dutch supplier is presenting the ingredient ahead of Fi Europe in Frankfurt, where it will demonstrate beverage concepts combining protein fortification with the light texture normally associated with refreshing drinks.

The new material extends the company’s existing clear whey protein range. FrieslandCampina says the pre-acidified version offers a neutral taste, good clarity and heat stability, allowing formulators to explore protein enrichment beyond conventional opaque shakes. It has not published a general operating envelope showing maximum protein concentration, heat-treatment temperature or shelf life across different beverage recipes.

Whey protein is widely used in drinks because it provides essential amino acids, but its behaviour depends strongly on the liquid in which it is dispersed. Proteins can unfold during heating, exposing regions that associate with neighbouring molecules. If aggregation becomes extensive, a drink may develop haze, sediment or a heavier texture, undermining a formulation intended to remain clear.

Acidity changes the electrical charge on protein molecules and therefore influences how readily they interact. Clear protein beverages are commonly formulated in acidic systems, where the relationship between protein composition, pH and processing conditions must be controlled. FrieslandCampina’s pre-acidified isolate is presented as a way to address part of that formulation challenge, rather than as a substitute for application trials.

The supplier identifies still and carbonated beverages among the intended applications. Carbonation brings additional variables because dissolved carbon dioxide affects acidity, while gas release can change foaming and filling behaviour. Clarity immediately after mixing also differs from stability after heat treatment and storage, particularly when flavours, minerals or sweeteners are present.

These constraints affect the manufacturing route selected for a ready-to-drink product. Some beverages are pasteurised before filling; others use different preservation and packaging arrangements. Protein stability needs to be assessed against the actual process and finished formulation, since a positive result obtained under one set of conditions does not establish performance under another.

FrieslandCampina will demonstrate the new isolate in three clear beverage concepts at Fi Europe, scheduled for 17–19 November. One is Re-vibe, described as a low-sugar protein soda incorporating galacto-oligosaccharides, or GOS, alongside the isolate. GOS supplies a fibre ingredient, while the whey isolate contributes the protein component. The company has not identified a commercial beverage customer launching Re-vibe.

Combining protein and fibre also requires control of the total dissolved and dispersed solids. Formulators must consider sweetness, viscosity and flavour interactions, together with the nutritional composition intended for the finished drink. The presence of GOS does not, by itself, establish a particular permitted health claim or that a serving contains enough fibre to meet a labelling threshold.

The supplier’s exhibition programme includes two other nutrition formats made with a different whey ingredient, Nutri Whey ProHeat. Nutri Boost is a compact shot formulated with 20g of protein, while Nutri Balance is a drinkable yoghurt containing 6% protein. ProHeat is a microparticulated whey protein intended for smooth, higher-protein drinks that face heat-processing challenges; neither concept is presented as proof of the new Clear PA isolate’s performance.

Microparticulation changes the physical characteristics of protein particles and can help manage texture in appropriate dairy formulations. It addresses a different objective from achieving a transparent drink. Keeping those technologies distinct is necessary when comparing the supplier’s range, since protein concentration, ingredient particle properties and required sensory characteristics vary between a compact dairy shot and a clear carbonated beverage.

FrieslandCampina already markets Nutri Whey Isolate Clear, produced through filtration processes and intended for clear beverage applications. The company’s published specifications for that established ingredient should not be transferred automatically to Clear PA. In particular, the supplier has not released a full new-product specification supporting an exact protein percentage or a universal processing tolerance for the pre-acidified variant.

Protein enrichment can also change the declared nutrition of a drink without changing how the liquid appears. Producers must calculate protein content in the finished serving, confirm analytical methods and check that any marketing claim is supported by the final recipe. The new isolate has been presented as an ingredient rather than a finished product with an established nutrition claim.

Commercial adoption will depend on manufacturers validating the ingredient in their own water systems, recipes and processing lines. Product development must establish clarity and taste at the intended protein dose, followed by compatibility with the filling process and the packaging selected. The company has disclosed a new formulation option and forthcoming demonstrations, not completed customer installations or a quantified addition to protein manufacturing capacity.
