€75m bakery technology complex breaks ground

FRITSCH has started construction of a consolidated German headquarters complex. The €75m Iphofen project will combine bakery machinery production, administration, customer trials, and product-development facilities.

FRITSCH and parent company MULTIVAC have begun construction of a €75m bakery machinery headquarters and production complex in Iphofen, Germany, consolidating five existing locations onto a single industrial site.

Covering approximately 78,000 square metres, the development will bring manufacturing, administration, applications work, customer demonstrations, and employee facilities together. Completion is scheduled for the second quarter of 2028.

A new production building will provide around 20,000 square metres of floor space for bakery machinery manufacturing and assembly. A separate three-storey administration building, extending to approximately 5,000 square metres, will contain offices, meeting areas, and a staff restaurant.

The complex has been designed around FRITSCH’s current workforce of roughly 400 people while providing capacity for as many as 600 employees. That margin supports further expansion across engineering, manufacturing, software, applications, sales, service, and commissioning without recreating the fragmented property structure the project is intended to replace.

Customer-development work will centre on a relocated World of Bakery Technology facility, where dough processing systems can be demonstrated and tested under production-relevant conditions. Manufacturers will be able to trial recipes, assess equipment configurations, and examine how products behave through sheeting, laminating, forming, cutting, and related processes.

Environmental systems planned for the site include photovoltaic generation, heat pumps, thermally activated building components, permeable grass paving, and local rainwater infiltration. Alongside lower operating energy demand, the consolidated layout should reduce repeated movements of components, work in progress, employees, and finished machines between separate facilities.

Machinery companies often acquire additional premises incrementally as order books and product portfolios grow. Although that approach provides capacity quickly, it can leave engineering, stores, fabrication, assembly, testing, and administration distributed across properties with duplicated handling and limited visibility over production status.

Bringing those functions together allows material to move through a more deliberate manufacturing sequence. Components can pass from receipt and storage into preparation, assembly, testing, and dispatch with fewer transfers, while engineering changes and quality issues can be addressed closer to the line.

Bakery lines require broader integration

Industrial bakeries now expect equipment suppliers to manage more than mechanical throughput. Labour availability, dough variation, rapid changeovers, hygiene, energy use, recipe control, data exchange, predictive maintenance, and integration with cooling and packaging systems all shape the value of a new line.

Dough remains a particularly variable raw material because flour, temperature, water absorption, fermentation, fats, inclusions, and processing history alter its behaviour. A machine that performs well with one recipe may stretch, compress, tear, or warm another formulation beyond the acceptable range.

Application trials expose those limitations before commercial installation. Engineers can observe whether a dough tolerates the proposed line speed, whether piece weight remains stable, and whether forming or cutting changes the finished structure. Adjustments made during a trial are considerably less disruptive than modifications introduced during commissioning at a live factory.

FRITSCH’s equipment portfolio spans artisan and industrial production for products including bread rolls, croissants, pastries, pizza, flatbread, pretzels, and laminated dough goods. Each category places different demands on stress reduction, sheeting, fat layering, proofing, cutting, depositing, and product transfer.

As manufacturers broaden their ranges, flexibility increasingly competes with maximum speed. Long runs can justify highly dedicated equipment, while private-label contracts, seasonal products, and rapid innovation require machinery that changes recipes and formats without losing an entire shift to cleaning and setup.

Controls and software have consequently become inseparable from the mechanical design. Recipe management, servo control, sensor feedback, line synchronisation, alarm analysis, and remote support influence output as directly as rollers, conveyors, cutters, and depositors.

MULTIVAC’s wider move towards connected processing and packaging systems provides the broader industrial setting for the Iphofen investment. Locating FRITSCH’s development and manufacturing teams together should make it easier to coordinate bakery machinery with handling, inspection, and packaging equipment elsewhere in the group.

Lead times remain a persistent constraint across capital equipment. A bakery replacing an ageing line may have only a narrow shutdown window, while a greenfield factory cannot begin earning revenue until machinery has been delivered, installed, commissioned, and validated.

Consolidated assembly and testing can remove avoidable internal delays, although customer-specific engineering and component availability will continue to influence delivery schedules. Motors, controls, drives, sensors, specialist stainless-steel components, and safety systems all need to arrive in the correct sequence for a build to progress smoothly.

The larger site should also support pre-assembly and factory acceptance testing, allowing mechanical, electrical, controls, and software faults to be resolved before equipment reaches the customer. More complete testing can shorten site commissioning and reduce the number of production problems first discovered after installation.

Recruitment will determine how fully the additional capacity can be used. Bakery machinery businesses compete with automotive, packaging, pharmaceutical, and general engineering employers for controls engineers, mechanical designers, welders, fitters, software specialists, and field-service personnel.

A modern headquarters can strengthen training and attract employees, but industrial knowledge still develops through exposure to customer products and operating conditions. The World of Bakery Technology will therefore serve as both a commercial demonstration centre and a practical environment in which teams can understand how machinery interacts with real dough.

The €75m project represents a long-term commitment to industrial bakery automation rather than a short increase in assembly space. Once operational, the site will provide a larger base for designing, testing, building, and supporting the lines on which increasingly varied bakery portfolios depend.
