Foodvalley expands upcycled ingredients programme

Foodvalley has secured funding for its second upcycling programme phase. Independent assessments will test environmental, nutritional, sourcing, and commercial performance in mainstream food formulations.

Foodvalley has secured additional funding for the second phase of its UPcycled4Food programme, moving the initiative from identifying barriers around food upcycling towards generating evidence that can be used in formulation, sourcing, and commercial decisions.

Foodvalley has received support from the Province of Gelderland alongside continued funding from the Laudes Foundation. The programme began in 2025 and is now examining where ingredients recovered or produced from food-industry side streams can provide measurable environmental, nutritional, sourcing, and business value.

Manufacturers, retailers, foodservice businesses, and ingredient suppliers are participating in the work. Its second phase concentrates on independent assessment rather than treating the existence of a usable upcycled material as sufficient evidence that it can compete with a conventional ingredient.

Working groups are covering cookies and biscuits, bread and rolls, blended dairy, and blended meat. Each category creates different formulation and processing constraints. Bakery products depend heavily on water management, dough behaviour, flavour, texture, and process repeatability, while dairy and meat applications can place greater demands on protein functionality, stability, colour, and sensory performance.

The current phase runs from June 2026 to May 2027. Foodvalley is assessing reformulation strategies in which conventional raw materials are replaced partially or wholly by upcycled alternatives, with the resulting evidence intended to inform product development, procurement, and sustainability decisions.

Food upcycling can begin with a material that currently has little commercial value, but producing a food-grade ingredient from it is rarely cost-free. Side streams may require separation, stabilisation, drying, milling, extraction, fermentation, concentration, or other treatment before they can be stored and incorporated reliably into another process.

Those additional operations affect both economics and environmental performance. A raw material diverted from waste may still consume substantial energy or water during conversion, while logistics can become inefficient if a low-density side stream has to travel long distances before processing. The value case therefore depends on the complete route from original process to finished ingredient rather than the source material alone.

Consistency presents another constraint. Side streams can vary with season, raw-material specification, factory conditions, and the process from which they originate. Industrial formulation requires predictable moisture content, particle size, flavour, colour, microbiological status, and functional behaviour, particularly where an ingredient is being introduced into an established high-volume product.

An apparently small formulation change can consequently alter operations further along the line. Water absorption can affect mixing and baking, additional fibre may change viscosity, proteins can influence emulsification or texture, and natural colour variation may become more visible in lightly processed foods.

Those interactions explain the programme’s emphasis on independent performance evidence. Food businesses need to know whether an alternative ingredient changes process time, line stability, shelf life, nutritional composition, allergen controls, or sensory performance before the environmental argument can be translated into routine production.

Sourcing reliability is equally important. A side stream produced in useful quantities today may decline if the original manufacturer’s process changes or demand for the source product falls. Long-term adoption therefore depends on suppliers being able to provide predictable volumes and specifications rather than a succession of small batches with different characteristics.

Upcycled materials can also create a second revenue stream for processors that previously paid to dispose of residues or sent them into lower-value applications. That commercial opportunity has encouraged work on proteins, fibres, oils, carbohydrates, and flavour compounds recovered from cereal, brewing, fruit, vegetable, dairy, and other processing streams.

UPcycled4Food is attempting to establish which of those opportunities survive contact with actual product development and procurement requirements. Environmental claims, nutritional performance, supply security, processing behaviour, and price all have to work closely enough together for an ingredient to remain in the formulation after the trial period ends.

Foodvalley is already considering a possible third phase that would extend the methodology into additional categories and international retail markets. The more immediate task is to establish a sufficiently robust evidence base for the categories already under examination.

That shifts upcycling away from the relatively easy question of whether a side stream can be turned into something edible. The harder industrial test is whether the resulting ingredient can arrive repeatedly at the right specification, run through an existing factory without creating fresh problems, and justify its place in the recipe once purchasing and production costs are included.
